Broccoli Cups – Easy Meal Prep

Hey guys, this Monday we’re sharing with you this new recipe that’s perfect for lunch boxes and that you can prepare for the whole week – no excuses for not eating healthy 😉


For the base you will need:

1 broccoli or cauliflower floret

1 egg

50g grated parmesan

40g oat flour

1 tbsp olive oil,oregano, mixed herbs and salt & pepper to taste.

Cut the broccoli and boil it for 10mins. Put it in a cloth and wring it to get rid of all water (super important step) then put it in a blender and mix it. Add in all other ingredients. Put your mixture in a cup shaped trays (the muffin ones should do) and put it in the oven for 20-25 mins @ 180•. Let it cool down and put in your favorite ingredients: peppers, tomatoes, cheese, chicken… put it back in the oven for 5 mins!
